One of these days I'm going to build a
quasi-portable open-fire whole hog rotisserie roaster out of a tank
head. Ideally wind powered with some sort of gear reduction.
It's always windy in Texas...except when it's 105º and there's yard work
to be done.

Authentic Texas BBQ? It's funny,
when people open a bbq restaurant and want to seem authentic they always
try to hitch their wagon to Texas. Who would stop at a joint like a
"New Hampshire Smokehouse" or a place selling "Real
Nebraska BBQ"? There's no doubt great bbq being
cooked in every corner of the US. Still, you see an awful lot of
restaurants which claim to be "Texas Barbeque". Imitation
is the sincerest form of flattery, so we real Texans can consider
ourselves complimented by these wannabe Texans. People
who wish they were in Texas Those folks
may serve fine bbq. Yet they rely on the fabled reputation of Texas
bbq to help attract customers. If you really enjoy bbq you owe it to
yourself to take a week or two and take a bbq vacation across the Lone
Star State. Start with the Texas BBQ Trail link. 

Newspaper to start the fire and wood for fuel are the only things that
burn in the King's firebox.

I've always wanted to try smoking a turkey in a cloth mesh bag. Allied
Kenco sells them, but smoking a turkey beer can chicken-style
with a 1 quart pineapple juice can is so damn good I just haven't broken
down and ordered any bags yet. I'd love to find some chicken sized
bags and give that a whirl. If you know where I can find them e-mail
the King.
